Why Can Honey Remain Edible for So Long?

Most foods provide microorganisms with water and nutrients. Honey contains abundant sugar, but it makes that food remarkably difficult for bacteria and fungi to use.

Bees begin with nectar, which contains much more water than finished honey. They repeatedly handle the nectar and move it through the hive, while warm air and wing movements encourage water to evaporate. When the bees seal mature honey inside wax cells, its water content is generally low enough to prevent most spoilage organisms from growing.

The concentration of sugar creates powerful osmotic pressure. A microorganism entering the honey tends to lose water to its surroundings rather than absorb it. Honey is also acidic, commonly with a pH somewhere between about 3.2 and 4.5. Enzymes added by bees contribute to its chemistry, including the production of small amounts of hydrogen peroxide under certain conditions.

These defenses do not make honey indestructible. If it absorbs enough moisture from humid air, it can ferment. Contamination and improper storage can also damage it. Honey should never be given to an infant younger than one year because it can contain dormant spores of the bacterium that causes infant botulism. Adults usually prevent those spores from growing in the digestive system, but infants may not.

Crystallization is not spoilage. It occurs when glucose separates from the liquid and forms crystals. Gentle warming can make the honey fluid again.

Properly sealed honey survives because bees transform watery nectar into a concentrated chemical environment where ordinary agents of decay struggle to function. Its longevity is less a mysterious immortality than an impressive piece of food preservation performed inside the hive.
