Why Does a Raw Egg Become Solid When Heated?

Most familiar materials soften or melt when heated. An egg does the opposite, changing from a slippery liquid into a firm solid.

Egg white is mostly water, but it also contains proteins folded into complicated three dimensional shapes. Weak chemical interactions hold each protein in its compact form.

Heat increases molecular motion and disrupts those interactions. The proteins begin unfolding, exposing parts that were previously hidden inside. This process is called denaturation.

Once unfolded, neighboring protein molecules attach to one another. They form a tangled network extending throughout the egg. Water becomes trapped within that network, transforming the transparent liquid into an opaque gel.

The egg turns white because the growing protein network scatters visible light. Before cooking, light can pass through the clear mixture more directly. After the proteins aggregate, light is redirected in many directions.

Different egg proteins change at different temperatures. The white begins thickening before every part of the yolk becomes firm, allowing cooks to create combinations ranging from a delicate soft boiled egg to a completely set one.

The change cannot normally be reversed by cooling. Heat has not merely frozen the egg into a temporary shape. It has allowed the proteins to form new connections. Excessive cooking squeezes water from the network and tightens it further, producing a rubbery texture.

Acids can denature proteins as well, which is why acidic ingredients can alter the texture of eggs without supplying the same amount of heat.

Cooking an egg therefore does not turn its water into a solid. It unfolds thousands of suspended proteins and links them into a microscopic net strong enough to hold the water in place.
